Commercial Kitchen

George Mason University (GMU) renovated and expanded the former Ike’s Diner to create the new Shenandoah Dining Center.

GHT provided mechanical, electrical, and plumbing (MEP) engineering design and LEED fundamental commissioning services to upgrade the existing MEP infrastructure. To align the project delivery with the university schedule, the design team met with BCOM reviewers to discuss review comments to expedite the approval process.

The modernized dining center includes an updated kitchen, new servery, and a community-focused dining area, which offers 24/7 service and accommodates up to 600 diners. The building’s mechanical system is served by the campus chilled water plant with air distribution from an existing indoor air handling unit (AHU).

To provide additional support, the building employs several rooftop AHUs to maintain the building’s balance and pressure. This mechanical system provides nearly 150 tons of cooling to the building. The building’s electrical system was also upgraded to employ a standby generator to maintain service during power outages.
